Mincaのオーナーであるシゲトさんは、大のラーメン好き！ニューヨークを訪れた際に東京ラーメンを食べれず、バンドメンバーと世界ツアーをして日本へ帰国した後、いろいろな種類のラーメンを食べたそうです。さらに、６年間のグルメラーメンツアーに参加し感銘を受けたそうです！後に、日本から直入荷した海苔、鰹節、椎茸を使った本当の日本ラーメンを提供するためにMincaが誕生しました。これらの味は、ラーメンをより美味しくさせるための欠かせない味で、ニューヨークのイースト・ヴィレッジ中で話題です！

When Shigeto, the owner of Minca, came to New York he couldn’t find the authentic noodles and ramen he loved so much in Tokyo. He went on tour with his band and was able to return to Japan and taste many different kinds of ramen, going on an unofficial Gourmet Ramen Tour for 6 years and was inspired. Minca was then born, emphasizing the hearty Japanese taste with use of seaweed, dried bonito, and dried shitake mushrooms straight from Japan. These flavors are what gives the ramen the amazing taste, and has made it an impressively popular joint in the heart of the East Village of New York.
